Mechelen cuckoo or other quality chicken, cut into pieces
3 chopped shallots
2 cloves of garlic
400 g mushrooms (whole)
150 g bacon cubes
500 ml red wine
500 ml chicken stock Herkules
3 sprigs of thyme, 3 bay leaves

Fry the chicken pieces on both sides in butter until golden brown.
Add the shallots and garlic.
Sprinkle the chicken with some flour. Add the red wine, stock, thyme and bay leaf.
Fry the bacon cubes in another pan, add the mushrooms.
Add to the chicken and let everything cook gently.
Serve with potato croquettes.
